Maple Dijon Vinaigrette
Serving size: makes about 1 cup
Ingredients
1/4 c. olive oil
1/4 c. canola or grapeseed oil
1/3 c. maple syrup
3 T. apple cider vinegar
2 T. Dijon mustard
1/2 t. minced garlic
2 t. minced red onion
1/4 t. salt to taste
1/4 t. pepper to taste
Directions
Combine oils in a measuring cup. In a blender, add syrup, vinegar, and mustard. Turn the blender on low, and slowly add the oil for the next 10-15 seconds until emulsified. Add garlic, onion, salt, pepper, and pulse a couple of times to incorporate all the ingredients. This dressing is delicious on any salad, especially paired with apples, blue cheese or goat cheese, pecans, and cranberries. It also makes a wonderful marinade for chicken or pork.
The Maple Dijon Vinaigrette makes the perfect finishing touch for grilled salmon or chicken. Brush it on halfway through cooking for a delicious, flavor-packed glaze.

*My go-to maple syrup is Crown Bourbon Barrel Maple Syrup. If you’re one of the lucky ones, you’ll find it at Costco, a 25 oz. bottle for less than $15, nearly half the price of other retailers. Otherwise, you can find it at Sam’s Club, Wal-Mart, and online.
